The personal input and on site presence of the directors interacting with guests is what makes one80 a unique experience, addictive to return. Both directors bring along over 45 combined years of experience within the hospitality and service industry, now injected into this Restaurant & Lounge. Rouvin’s and Jesmond’s passion for the food and drink industry is evident and tangible when experiencing the product offered at one80.
Rouvin’s track record consists of a wealth of experience in food and beverage operations peaking in Food and Beverage management roles for large operations in some of the leading 5-star hotels in Malta. An interesting venture was General Manager for the Presidential Palaces. The hospitality and tourism segment was always at heart for Rouvin, in fact he moved back to the hotel scene in the capacity of Operations Manager of 2 Malta renowned central hotels, a 4-star and a 5-star.
The experience is backed up by industry related qualifications. Rouvin holds an ITS Higher Diploma in Hospitality Management as well as a BA (Hons) Tourism Studies from the University of Malta. Rouvin’s training happened at a 5-red star leading hotel of the world in Scotland. Several other academic achievements in Food and Drink, Wines and countless certifications pertaining to management skills all contribute to Rouvin’s career.
Up and close with Rouvin off duty, Rouvin spends quality time with his wife Graziella and family, dining out with friends, exploring new wines, travel, loves fashion, keeping up to date with the music industry and keeps engaged with latest trends in the food and drink industry. All the latter connect with one80 in a way or another
Raised in Mellieha, co-owning a restaurant in this idyllic village is a dream come true for Jesmond. Mellieha has always been his home town except for time spent working in London and Florida.
In Malta Jesmond started out as Restaurant Manager for a leading hospitality company moving on to become a Food & Beverage Manager in two of its 5-star Resorts. During this time Jesmond became a perfect example of a lifelong learner, attending various workshops both locally and abroad; his most memorable one in Umbria, Italy with a Food & Beverage consultancy company visiting various quality food & beverage producers. Jesmond has always been fascinated by wine, so much so that he completed the WSET Diploma in wines and spirits. Visits to areas such as Chianti, Chablis, Beaune and Bordeaux certainly made studying for the Diploma more intriguing. Family holidays are nearly always to wine regions. Jesmond’s wife and children would be surprised if their holiday cottage wasn’t surrounded by vineyards.
Jesmond enjoys spending quality time with his family, travelling and reading namely about wines. He is also a passionate Liverpool FC Supporter.
Mark holds an excellent track record having worked with some of the best chefs on the island as well as in a renowned top hotel in the UK.
Mark brings along abundance of experience into our kitchen with a focus on local seasonal produce.
Passion for food quality is a key factor for Chef Mark, using his expert preparation techniques whilst executing uncomplicated dishes, yet with unique flavours one would want more and more of !
